INGREDIENTS

– 1 ½ cups 2% cottage cheese– 8 large egg– ¼ cup shredded Monterey Jack cheese– ¼ cup shredded Swiss cheese– ¼ tsp dried parsley– ½ tsp garlic powder– ¼ tsp salt– ¼ tsp pepper– 1 tsp hot sauce (or more to taste)– ½ cup finely diced portobello mushroom– ½ cup finely chopped kale

Cooking spray a 12-cavity nonstick muffin tin and preheat oven to 200 degrees. Blend the first 9 ingredients until smooth.

Egg bites won't rise much, so fill muffin tin almost to the top. Evenly distribute chopped mushrooms and kale.
Step 3

Place muffin tin in oven and bake egg bites 70–75 minutes until set and golden.

After a few minutes, lightly cut each egg bite from the tin. Egg bites keep 4 days in an airtight container in the fridge. They heat up quickly in the microwave or oven.
