Pumpkin Waffle – 2 ½ cups all-purpose flour – ¼ cup packed brown sugar – 4 teaspoons baking powder – 2 teaspoons ground cinnamon – 1 teaspoon ground allspice – 1 teaspoon ground ginger – ½ teaspoon salt – 2 cups milk – 1 cup canned pumpkin – 4 eggs, separated – ¼ cup butter, melted Apple Cider Syrup – ½ cup white sugar – 1 tablespoon cornstarch – 1 teaspoon ground cinnamon – 1 cup apple cider – 1 tablespoon lemon juice – 2 tablespoons butter

Mix flour, brown sugar, baking powder, cinnamon, allspice, ginger, and salt. Mix pumpkin, egg yolks, and milk separately. A clean, dry basin is needed to beat egg whites for soft peaks.
