Peanut Brittle Recipe

A few simple ingredients make old-fashioned peanut brittle easy to make on the stove. Classic peanut-filled hard candy with a buttery taste!

INGREDIENTS

SERVINGS: 50 PIECES
– 2 cups granulated sugar (400 grams)
– 1 cup light corn syrup (320 grams)
– ½ cup water (120 ml)
– 2 cups dry roasted and lightly salted peanuts (280 grams)
– ¼ cup unsalted butter softened and cubed into small pieces (60 grams)
– 1 teaspoon baking soda
– 2 teaspoons pure vanilla extract
INSTRUCTIONS
Step 1

Parchment a cookie sheet and set aside. Mix granulated sugar, corn syrup, and water in a large saucepan.
Step 2

Stir occasionally over medium-low heat until the sugar mixture reaches 250°F (121°C).
Step 3
━━━━━━━━━━━
Add peanuts and stir while heating. Keep stirring until the mixture reaches 300°F (150°C).
Step 4

Shut off the stove and remove the saucepan. Add butter, baking soda, and vanilla quickly.

You must stir quickly but carefully because the mixture will steam. Continue stirring until butter is full
y incorporated.
Step 6

Carefully pour the hot candy mixture onto the cookie sheet and spread it evenly with a spoon or rubber spatula.
Step 7

Spread peanut brittle thinner with two forks if needed. Break and eat the peanut brittle after 45–60 minutes of
cooling.
