INSTRUCTIONS

Step 1

━━━━━━━━━━━

Parchment a cookie sheet and set aside. Mix granulated sugar, corn syrup, and water in a large saucepan.

Step 2

━━━━━━━━━━━

Stir occasionally over medium-low heat until the sugar mixture reaches 250°F (121°C).

Step 3

━━━━━━━━━━━

Add peanuts and stir while heating. Keep stirring until the mixture reaches 300°F (150°C).

Step 4

━━━━━━━━━━━

Shut off the stove and remove the saucepan. Add butter, baking soda, and vanilla quickly.

Step 5

━━━━━━━━━━━

You must stir quickly but carefully because the mixture will steam. Continue stirring until butter is fully incorporated.

Step 6

━━━━━━━━━━━

Carefully pour the hot candy mixture onto the cookie sheet and spread it evenly with a spoon or rubber spatula.

Step 7

━━━━━━━━━━━

Spread peanut brittle thinner with two forks if needed. Break and eat the peanut brittle after 45–60 minutes of cooling.
