Open-Faced Prosciutto and Plum Sandwiches Recipe

An easy, light, and seasonal summer dinner like these Open-Faced Prosciutto and Plum Sandwiches may be just what the doctor ordered!

INGREDIENTS

━━━━━━━━━━━━

– 1 ¼ cup fig preserve – 1 Tbsp freshly squeezed lemon juice – 1 Tbsp peeled and grated fresh ginger – ⅓ cup softened goat cheese – 4 slices thick crusty bread, toasted – 1 cup arugula – 2 ripe plums, cut into thin wedge – 3 oz. thinly sliced prosciutto

INSTRUCTIONS

Step 1

Gently mix fig spread, fresh lemon juice, and grated ginger in a ramekin.

Step 2

━━━━━━━━━━━

Toast the bread and spread goat cheese on each slice. Arugula on each slice of bread should be evenly distributed. 

Step 3

━━━━━━━━━━━

Top with prosciutto and plum slices. Drip fig mixture on top.
