Quick and easy Avocado Chicken Salad makes a tasty lunch on the go. I like grapes in chicken salad, but you can add anything!

INGREDIENTS

– 2 avocados, peeled and pitted– 2 tsp freshly squeezed lemon juice– 3 cups cooked and shredded chicken (can use rotisserie chicken)– ¼ cup Greek yogurt (I use 2%)– ½ cup halved red grape– ½ tsp cayenne pepper– ½ tsp salt– ¼ tsp pepper– ¼ cup chopped parsley
INSTRUCTIONS
Step 1

Mash avocado and lemon juice in a large bowl.
Step 2

Add shredded chicken, yogurt, grapes, cayenne, salt, pepper, and parsley to the bowl. Mix ingredients.
Step 3

Chicken salad can be eaten plain or on toasted bread or lettuce! Refrigerate leftovers in airtight container for 2-3 days.
