Tuna Nicoise Sandwich Recipe

INGREDIENTS

– 3 Tbsp extra-virgin olive oil – 2 Tbsp white-wine vinegar – 1 Tbsp Dijon mustard – Coarse salt and freshly ground pepper – 1 8- inch round loaf country-style bread – 2 cans oil-packed tuna 6 oz. each, drained – ¼ English cucumber sliced – ½ small red onion sliced – 1 cup chickpea – 2 cloves garlic – ½ avocado sliced – 3 Tbsp jarred olive tapenade – 1 cup fresh basil leave – 2 large eggs hard-boioled and sliced

INSTRUCTIONS

Step 1

Mix olive oil, vinegar, mustard, salt, and pepper in a medium bowl. Mix tuna and dressing.Cut bread in half horizontally and remove most of the soft crumb for croutons.

Step 2

Cover bread bottom with olive tapenade. Basil leaves and egg slices on top. Sprinkle salt and pepper. After tuna, add onions and cucumber.

Step 3

Mash chickpeas and garlic in a small bowl. Place chickpea mixture on other half of bread, add avocado, salt, and pepper.

Step 4

Plastic wrap sandwich tightly. A heavy skillet weighs the sandwich between two baking sheets.

Step 5

Refrigerate overnight or wait 1 hour.Cut and serve quarters.
