The Best Homemade Waffles Recipe

– 2 cups (254 grams) all-purpose flour – 1/4 cup (50 grams) granulated sugar – 2 tablespoons (20 grams) cornstarch – 1 teaspoon fine salt – 1 teaspoon baking soda – 1 teaspoon baking powder – 1 3/4 cup buttermilk – 1 large egg – 2 large egg white – 2 teaspoons vanilla extract – 4 tablespoons unsalted butter, melted, plus more butter for serving – Maple syrup, for serving

Mix flour, sugar, cornstarch, salt, baking soda, and baking powder in a large bowl. Mix the buttermilk, egg, egg whites, and vanilla with a rubber spatula until barely combined. Mix in melted butter until just combined.

Let the batter rest covered for 15–30 minutes. Preheat oven to 250°F. Heat the waffle iron to medium per manufacturer's instructions.

Pour 1/3–1/2 cup batter into 8-inch square waffles. Full waffles are cakey. Close waffle maker lid and cook 6 minutes or until both sides are deep golden brown.

Put 1/2 to 3/4 cup batter in each cavity of a 7-inch Belgian waffle iron, close, and flip. Cook waffles for 7 minutes until deep golden brown and crisp on both sides.
