Heat the oven to 375°F. Hull strawberries by removing the stalks and dazzling white top. Split them in half and combine in a big basin. Mix in vanilla, rose water, honey, lemon zest, and mint.
Spread the strawberry mixture out evenly on a baking sheet with sides that are 1 inch high. In the middle of the 35-minute roasting time, mix the food.
Scrape roast strawberries into a wide basin carefully. Mash rustically with a fork until liquids emerge but strawberry pieces remain.
Let cool 5–10 minutes. Top ice cream, waffles, Greek yogurt, or charcuterie boards with it. Optional lemon zest and mint garnish.
