– 1 head Cauliflower– 2 tbsp Oil– 1 tsp Garlic (minced)– 4 tbsp Ham (diced)– 0.5 cup Onion– 1 cup Mixed Vegetables (Corn, Peas, Carrots)– 1 whole Egg– 1 tbsp Soy Sauce– 1 tbsp Oyster Sauce– 0.5 tbsp Chinese Cooking Wine– 0.5 tsp Sesame Oil– Salt – to taste– 0.5 tsp Pepper (powdered) – to taste

Sauce for stir-frying
Take a bowl and mix together soy sauce, oyster sauce, and Chinese cooking wine. Set this bowl aside.

Vegetable Prep
Dice onions and garlic. Without frozen mix, dice carrots Set aside with peas and corn. Shred cabbage and set aside. Dice cauliflower in food processor.

Other Ingredients
Dice ham and reserve.
Arrange ingredients as shown. This helps work quickly when the wok and oil are hot.

To Stir-fry
Heat a wok or deep pan on high. Add half oil.
Add one beaten egg to wok. Scramble and remove from wok. Keep aside. Heat remaining cooking oil until smoking.

Fry garlic and onion until slightly brown. Add ham and fry 30 seconds. Add the above stir fry sauce.

Continue frying until dry.Add cabbage and mixed veggies. Space vegetables apart to avoid sweating and sogginess. Spread them in the wok.Using a spatula, mince egg.

Sprinkle salt and pepper. Taste and season. Fried cauliflower until smokey and coated.Add sesame oil and stir.Serve with spring onion greens diced.
