Jalapeño Tequila Shrimp Recipe

INGREDIENTS

– 1 jalapeño pepper, chopped – 2 cloves garlic – 6 mint leave – ⅓ cup tequila – ¼ cup orange juice – ¼ cup lime juice (from about 2 limes) – 1 lb. extra jumbo shrimp, peeled and deveined with tails left on – ¼ tsp salt – ¼ tsp pepper Yogurt Dipping Sauce – 1 cup Greek yogurt – 2 Tbsp lime juice (from 1 lime) – 2 cloves garlic, minced – Salt and pepper

INSTRUCTIONS

Step 1

Process jalapeño, garlic, and mint in a food processor until minced. Add tequila, orange, and lime juices and pulse.

Step 2

Float 4-5 shrimp on skewers in a shallow baking dish. Repeat for all shrimp. Pour the tequila jalapeño marinade over them. Season with salt and pepper.

Step 3

Marinate skewers in fridge for an hour, rotating halfway through. 

Step 4

━━━━━━━━━━━

Heat grill to medium and lightly oil grates. Cover and grill shrimp skewers for 3 minutes per side until pink, then transfer to a platter.

Step 5

Blend yogurt, lime juice, garlic, salt, and pepper in a medium bowl.
