Mix milk, water, yeast, eggs, honey, vanilla, sugar, and salt in a dough hook-equipped electric mixer. Blend well.

Mix in all but 1 cup of flour on low speed. Add one cube of butter at a time on low speed, kneading well and scraping the bowl before adding more.

After mixing in all the butter, add the remaining flour and knead on low speed for 5 minutes until smooth and elastic.

Cover the dough with plastic wrap in a lightly oiled bowl. Wait 2 hours for it to double. Punch down the dough, cover with plastic, and refrigerate overnight or 24 hours.

Heat a Belgian waffle iron before cooking. Knead in all the pearl sugar after removing the dough from the fridge. Roll 10 equal pieces of dough into balls.

First ball of waffle dough on grid, cook per waffle maker instructions. Cook until golden all over, 4–5 minutes. Carefully place on baking sheet with tongs or fork.

If eating immediately, keep waffles warm in a 200°F oven. Serve these waffles warm to avoid pearl sugar hardening. Reheat leftover waffles in a 200°F oven after freezing.
