INGREDIENTS

– 1 lb. ground beef– 6 Tbsp water– 2 Tbs taco seasoning (store-bought or homemade)– 4 large flour tortillas (burrito size)– 1 ⅓ cups cooked seasoned rice– 1 cup shredded cheese (I use a combination of cheddar, Monterey jack, and mozzarella)– ½ cup nacho cheese sauce, warmed– ½ cup chipotle sauce– ¼ cup sour cream– ¼ cup tortilla strip– 2 Tbsp unsalted butter
INSTRUCTIONS
Step 1

Heat a large skillet on medium. Break ground beef with a spatula or wooden spoon while cooking. 5-7 minutes to brown beef.
Step 2

If needed, drain skillet grease. Return skillet to stove and lower heat. Mix water and taco seasoning into beef. Cook 2 minutes to thicken.
Step 3

Soften flour tortillas in the microwave or griddle. Warmed tortillas flatten.
Step 4

Place ½ cup of ground beef mixture in the center of each tortilla. Mix ground beef with ⅓ cup rice, 2 Tbsp cheese, 2 Tbsp cheese sauce, 2 Tbsp chipotle sauce, 1 Tbsp sour cream, and 1 Tbsp tortilla chips. Tailor ingredients to taste.

Roll the tortilla tightly with folded sides toward the center.Heat large skillet or griddle on medium.
Step 6

Butter each burrito top and bottom. Put 1 Tbsp shredded cheese in each burrito and press. Heat griddle and place burritos cheese-side down.
Step 7

Grill cheese 1 minute until golden. Add 1 Tbsp shredded cheese to each burrito to stick. Flip burritos and cook until cheese is golden. Eat burritos with sour cream, guacamole, salsa, etc.
