Greek Grilled Cheese Recipe

Figs, feta cheese, baby spinach, tomatoes, roasted red peppers, and caramelized red onions are just a few of the tasty things that are in this Greek Grilled Cheese.

INGREDIENTS

━━━━━━━━━━━━

– 1 Tbsp olive oil – ½ red onion, thinly sliced – 4 slices good crusty bread – 2 Tbsp unsalted butter – 4 oz. feta cheese (about 6 slices) – ⅓ cup roasted red pepper – 1 tomato, thinly sliced – ½ cup baby spinach leave – ⅓ cup sliced kalamata olive

INSTRUCTIONS

Step 1

Put olive oil in a small skillet on low. Caramelize sliced onion for 15-20 minutes. Over medium-low heat, cook all four bread slices butter-side down in a skillet or griddle.

Step 2

Put feta on each slice of bread. Top two slices with roasted red peppers and tomato. Add baby spinach, caramelized red onions, and kalamata olives to two more feta-topped bread slices.

Step 3

Carefully sandwich two bread slices. (Alternatively, layer the ingredients on two slices of bread (feta first) and top with the other two. 

Step 4

This grilled cheese has many ingredients, so some may fall out. Put them back!Grill bread until golden, then flip and grill for 3 more minutes.Slice and serve.
