INGREDIENTS

– 1 Tbsp olive oil– ½ red onion, thinly sliced– 4 slices good crusty bread– 2 Tbsp unsalted butter– 4 oz. feta cheese (about 6 slices)– ⅓ cup roasted red pepper– 1 tomato, thinly sliced– ½ cup baby spinach leave– ⅓ cup sliced kalamata olive
INSTRUCTIONS
Step 1

Put olive oil in a small skillet on low. Caramelize sliced onion for 15-20 minutes. Over medium-low heat, cook all four bread slices butter-side down in a skillet or griddle.
Step 2

Put feta on each slice of bread. Top two slices with roasted red peppers and tomato. Add baby spinach, caramelized red onions, and kalamata olives to two more feta-topped bread slices.
Step 3

Carefully sandwich two bread slices. (Alternatively, layer the ingredients on two slices of bread (feta first) and top with the other two.
