My Apple Tart on Puff Pasty has sweet apple slices on fluffy, crisp puff pastry dough. A drizzle of honey and fresh thyme elevate these tarts. Ideal for breakfast or Sunday brunch.
Ingredient
– 1 sheet puff pastry thawed but chilled– 2 medium appleEgg wash:– 1 large egg– 1 Tablespoon water– 2 Tablespoons turbinado or any course sugarHoney mixture:– ⅓ cup honey– 1 Tablespoon fresh thyme leave– 1 teaspoon freshly squeezed lemon juice

Preheat oven to 425°F. Cover a large rimmed baking sheet with parchment.

Place puff pastry sheet on lightly floured surface. Carefully roll the pastry to 12x12 inches with a rolling pin. Cut 6 squares. Place pastry squares on parchment-lined baking sheet.

Spread 1 tablespoon of preserves on each square without touching the pastry edges. Start placing apple slices (I did 3 depending on size) on the preserves.

Spoon more preserves over the apple slices. Egg wash is made by beating egg and water in a small bowl. Brush pastry borders with egg wash. Sprinkle sugar evenly on the border.

Bake until the edges puff and are golden brown and crisp, 30–35 minutes. Mix the honey, lemon juice, and fresh thyme while the tarts bake.

Rest tarts on baking sheet for a few minutes. To serve, drizzle honey-thyme mixture. Recommended warm. Enjoy!
