Easy Apple Crumble Pie with Oats Recipes

Apple crumble with oats topping has the best flaky crust, juicy cinnamon-kissed apples, and oat streusel.  This pie will be your fall and holiday staple!

PIE CRUST – 2 cups all-purpose flour – 1/2 teaspoon salt – 3/4 cup 1 1/2 sticks unsalted butter – 3 tablespoons margarine or chilled vegetable shortening – 1/4 cup ice water APPLE FILLING – juice of 1 lemon – 5 to 6 medium to large apple – 2 Tablespoons cornstarch – 1/3 cup light brown sugar – 4 tablespoons butter – 3 tablespoons jam – 1/4 teaspoon ground cinnamon OAT STREUSEL – 3/4 cup unbleached all purpose flour – 1/2 cup packed golden brown sugar – 1/4 cup sugar – 1/2 teaspoon ground cinnamon – 1/2 teaspoon salt – 7 tablespoons chilled unsalted butter – 1/2 cup old-fashioned oat

Hand Method: Sift pie crust flour and salt in a large bowl. Cut chilled butter and margarine into 1-tablespoon pieces and add to flour. Cut shortening and flour into coarse meal with a pastry cutter.

Mix flour and salt in processor. Cut butter and margarine into flour. Short processing makes coarse meal. Add water slowly and process briefly. Whole thing takes 20–30 seconds. Make two equal dough portions. Wrap disc in plastic. Fridge pastry for an hour.

Apple filling Mix lemon juice in a big bowl. Core, peel, and thinly slice whole apples.Dredge all apple slices in fresh lemon juice to flavor and prevent browning. Mix cornstarch and apples. Keep prepared apples.

Add brown sugar and butter to a medium skillet over medium heat. After butter melts, add berry jam. Mix apples with brown sugar. Cook them in mixture for 5 minutes. Wait to cool and make the topping.

Process first 5 ingredients. Add butter and blend on/off until moist dough forms (like wet sand). Add oats and mix briefly with on/off turns, leaving half whole. Set aside.

Roll long-chilled pastry after 15 minutes at room temperature.Preheat oven to 375 F.Lightly flour a marble, pastry board, or kitchen counter. Make a flat round from a pastry disc, saving the rest for another pie.

Roll pastry to 1/8-inch thickness and slightly larger than pie plate. Fold rolled pastry circle in half for easy lifting. Carefully place pastry in pie plate. Some pastry remains. Leave room to crimp after trimming with scissors.

Add apple filling.Sprinkle streusel evenly over filling. Bake sheet pie.Bake pie until crust is golden brown and juices bubble 50–60 minutes.This pie was ready in 45 minutes. Each oven is unique. I wanted no brown topping. Wire-rack cool.
