This recipe for Cosmic Brownies is very rich, fudgy, and chewy, just like the store-bought ones. But it's so much better because it doesn't have any added chemicals.

– 10 tablespoons (142 grams) unsalted butter– 1 cup (200 grams) granulated sugar– 1/3 cup (67 grams) packed light brown sugar– 3/4 cup plus 2 tablespoons (88 grams)– 1/2 teaspoon vanilla extract– 2 large eggs plus 1 egg yolk– 1 tablespoon corn syrup– 2/3 cup (85 grams) all-purpose flour– 1 tablespoon cornstarch– 1/4 teaspoon salt– 1/2 cup heavy cream– 1 1/2 cups (255 grams)

Warm the oven up to 350°F. Spray cooking spray on the foil or parchment paper that you use to line an 8-by-8-inch metal baking pan.

Heat butter in a large microwave-safe bowl for 90 seconds on high. Add brown sugar, cocoa powder, and granulated sugar.

If hot, cool before adding vanilla, eggs, egg yolk, and corn syrup. Mix well. Mix flour, cornstarch, and salt. Thick batter. Place in pan and bake 25 minutes. Finish pan cooling.

Put cream in a small microwave-safe bowl and microwave on high for 1 minute. Add chocolate chips. Wait 3 minutes before stirring until smooth.

Pour over cooled brownies and smooth. Sprinkle Rainbow Crunch Chips. Wait 1–2 hours for the frosting to set before cutting.

Brownies last 3 days at room temperature and 1 week in the fridge in an airtight container. Brownies are best chilled.
