Buffalo Chicken Grilled Cheese Recipe

This Buffalo Chicken Grilled Cheese sandwich combines two of life's best foods. The creamy blue cheese spread, spicy chicken, and sharp cheddar cheese will make you want this sandwich for lunch and dinner!

INGREDIENTS

– 2 cups shredded chicken (rotisserie chicken works well) – ⅓ cup hot sauce (I recommend Frank's Red Hot) – 6 oz. light cream cheese – ⅓ cup crumbled blue cheese – ¼ cup chopped celery – 1 ½ Tbsp unsalted butter – 4 slices good crusty bread – 6 slices sharp cheddar cheese

INSTRUCTIONS

Step 1

Mix hot sauce and shredded chicken in a medium bowl. In a separate medium bowl, mix cream cheese, blue cheese, and celery.

Step 2

Butter one side of each slice of bread. Turn bread over and generously spread cream cheese/blue cheese mixture on each slice. 

Step 3

Layer buffalo chicken and cheese on two bread slices.

Step 4

━━━━━━━━━━━

Preheat a griddle or pan to medium. Sandwich buffalo chicken on butter-side-down bread slices on griddle and top with butter-side-up slices.

Step 5

Cook for two minutes per side until bread is toasty and cheese melts.
