INGREDIENTS

– 2 Tbsp olive oil, divided– ¼ cup diced onion– ½ Tbsp minced ginger– 1 tsp minced garlic– 1 cup fresh cranberrie– ¼ cup granulated sugar– ½ cup water– 8 brussels sprouts, stems cut off and halved– Salt and pepper– 2 slices good bread– 1 Tbsp unsalted butter– 6 slices fresh mozzarella cheese
INSTRUCTIONS
Step 1

Preheat oven to 450°F. Heat 1 Tbsp olive oil in a medium saucepan on medium-low. Add onion, ginger, and garlic and cook until softened and fragrant.

Add cranberries, sugar, and water to the pot and boil. Stir-simmer low for 15 minutes. Berry burst thickens blend. Remove relish from heat and cool in a bowl.

Prepare brussels sprouts while cranberry relish cooks. Mix brussels sprouts with remaining 1 T olive oil, salt, and pepper in a medium bowl.

Spread cut-side-down brussels sprouts on foil-lined baking sheets. Bake 25 minutes until crispy.
Step 5

On a griddle or skillet over medium-low heat, place each slice of bread butter-side down.

Put a thin layer of cranberry relish on each slice of bread. Add mozzarella and roasted brussels sprouts to two slices.
