Avocado Egg Salad with Spinach Recipe

Love egg salad but want a healthier version? Healthy avocado egg salad contains eggs, avocado, and spinach for protein and nutrition. It makes the perfect sandwich on whole grain bread!

INGREDIENTS

– 7 eggs, hard boiled – 4 oz. plain Greek yogurt – 2 avocados, peeled and pitted – 2 stalks celery, chopped – 1 cup baby spinach, roughly chopped – Hot pepper flakes to taste – ½ tsp salt – Good bread (toasted if desired)

INSTRUCTIONS

Step 1

Put the Greek yogurt and peeled hard-boiled eggs in a large bowl and mash them up. Add pepper and salt.

Step 2

Use a different medium bowl to mash the avocado.

Step 3

━━━━━━━━━━━

Add chopped celery and spinach to the bowl with the mashed egg and mix them together.

Step 4

Add salt and hot pepper flakes and mix well.

Step 5

━━━━━━━━━━━

Use nice crusty bread, toasted if you want, to make avocado egg salad sandwiches.
