This Bacon Blue Cheese Spinach Dip is perfect for game day and can be made in skillets or baking dishes!

INGREDIENTS

– 1 Tbsp olive oil, plus more for brushing dish– ¾ cup diced onion– 2 tsp minced garlic– 10 oz. fresh baby spinach– 8 oz. cream cheese, room temperature– 1 cup sour cream– 1 cup shredded mozzarella– 1 cup crumbled blue cheese– ½ cup crumbled bacon– 1 tsp pepper– 1 tsp red pepper flake– ⅛ tsp salt
INSTRUCTIONS
Step 1

Preheat oven to 350 degrees and lightly grease 6 5" mini cast iron skillets or an 8x8 baking dish.
Step 2

Stir olive oil into a large skillet over medium heat. When hot, cook onion for 6 minutes until softened and golden.
Step 3

Add garlic and cook another minute until fragrant. Reserve onion and garlic in a large bowl.
Step 4

Wilt half the spinach in the skillet for 4 minutes. Cook remaining spinach in skillet for 3–4 minutes until wilted.
Step 5

Press water from cooked spinach in a strainer with a wooden spoon. Add to onion-garlic bowl.
Step 6

Mix cream cheese, sour cream, mozzarella, blue, bacon, pepper, red pepper flakes, and salt in bowl. Mix everything well. Put mixture in skillets or baking dishes.
Step 7

In 5" skillets, bake dip 10-12 minutes until golden. Bake 8x8 dish 20-22 minutes until golden. Broil dip for 2 minutes to golden.With crackers, tortilla chips, or your favorite dippers!
