Easy Baked Pumpkin Donuts with Maple Glaze are a fall favorite! Homemade cake donuts are soft and simple to make. They're perfect for breakfast, snack, or dessert and ready in under 30 minutes!

– 1 ¾ cups all-purpose flour– 1 ½ teaspoons baking powder– ½ teaspoon salt– 1 ½ teaspoons pumpkin pie spice or 1 teaspoon cinnamon plus 1/4 teaspoon each nutmeg– ⅓ cup vegetable oil– ½ cup brown sugar– 1 egg– 1 ½ teaspoon vanilla extract– ¾ cup pure pumpkin puree NOT pumpkin pie filling– ½ cup unsweetened almond milkFOR THE MAPLE GLAZE:– 2 cups confectioners' sugar– 3 Tablespoons unsweetened almond milk– 2 Tablespoons maple syrup

Preheat oven to 350ºF. Place a rack in the oven's center. Baking spray a donut pan and set aside. Mix flour, baking powder, salt, and spices in a large bowl; set aside.

Oil, brown sugar, egg, vanilla, pumpkin, and milk should be mixed in a paddle attachment-equipped electric mixer. A wooden spoon can be used to mix it all by hand.

Pour in the dry ingredients slowly and mix. Stop halfway through to scrape and incorporate the bowl sides with a spatula.

Fill donut cups with batter using a pastry bag. Fill almost full. Donuts should spring back when gently pressed after 12-15 minutes.

Place donuts on a wire rack to cool for a few minutes.
Make the maple glaze while the donuts cool.

For maple glaze, icing is optional. Add powdered sugar to a bowl and stir in maple syrup and unsweetened almond (or coconut) milk until desired consistency.

Let the glaze run off the spoon to test consistency. Before melting, the glaze should form a ribbon and hold it for a few seconds.

If the glaze is too thick, add almond milk or water and test again. If the glaze is too thin, add powdered sugar. Sprinkles or chopped pecans are optional. Enjoy!
