– 12 ounces fresh cranberrie– 1 Granny Smith apple– ½ cup light brown sugar– 1 tablespoon grated orange zest– ¼ cup freshly squeezed orange juice– 1 ⅙ teaspoons ground cinnamon divided– 2 extra-large egg– 1 cup plus 1 tablespoon granulated sugar– ¼ pound 1 stick unsalted butter, melted and slightly cooled– 1 teaspoon pure vanilla extract– ¼ cup sour cream– 1 cup all-purpose flour– ¼ teaspoon kosher salt

Heat the oven to 325°F. Mix the cranberries, apple, brown sugar, orange zest, juice, and teaspoon of cinnamon in a medium bowl. Set aside.

For 2 minutes, beat eggs in a paddle-attached electric mixer bowl on medium-high speed. Combine 1 cup sugar, butter, vanilla, and sour cream on medium speed.

Turn mixer to low and slowly add flour and salt.
Put cranberries in a 10-inch glass pie plate or casserole dish. Cover fruit mixture with batter.

Cover the fruit evenly. Completely cover the fruit with batter. Mix the remaining 1 tablespoon sugar and 1/8 teaspoon cinnamon. Cover batter evenly.

Bake the cake for 55–60 minutes until a toothpick inserted in the middle comes out clean.

Fruit will bubble around the cake's edges. Best warm but fine at room temperature.
