– Apple Cider and Dijon Mustard Vinaigrette (recipe below)– 4 cups curly kale, ribs removed and roughly chopped– 1 cup shredded green cabbage– ¼ cup roughly chopped roasted and salted almondApple Cider and Dijon Mustard Vinaigrette– ¼ cup extra-virgin olive oil– 3 Tbsp apple cider vinegar– 1 Tbsp dijon mustard– 1 Tbsp maple syrup– 1 tsp freshly squeezed lemon juice– 1 tsp white wine vinegar– ¼ tsp salt– ⅛ tsp black pepper
INSTRUCTIONS
Step 1

Pour 2 Tbsp dressing over kale in a large bowl. To tenderize kale, massage dressing into it for two minutes with your hands.
Step 2

Toss kale and green cabbage. Sprinkle chopped almonds over kale and cabbage in two bowls. Pour more dressing on each salad.
Step 3

Shake all ingredients in a mason jar. Mix everything in a medium bowl if you don't have a mason jar. Store dressing in fridge until use.
